Life is Peachy

Ain't life peachy? Peachy greens that is. I made the absolute best green smoothie this morning. Kale, Spinach, Celery, Bananas, Peaches, and fresh pressed Apple Juice. I'm telling you it was delicioso. I've been playing with my eating to figure out what works best while training. I also made tuna last night that I will eat for lunch today. Feel free to make. It is one of my favorite things to eat for lunch. I'm really bad about getting enough protein in because I don't love meat. And that is an understatement. I have been using HelloFresh, which gives me the opportunity to try a variety of foods all while learning how to cook meat that I might enjoy. I thought it was worth the try. To my surprise, it has been pretty tasty. I still will only eat half of the chicken breast, but it is better than not eating any protein at all. This past weekend was spent in San Marcos and San Antonio. We went to my Alma Mater's High School football game, ran, shopped at the outlets way too long, went to the Pearl District, drank one too many margaritas, met Charles Barkley, ran the Rock n' Roll Half Marathon, and ate at Mi Tierra. Isn't it the most wonderful time of the year? Hopefully everyone cherishes the moments all year round, but the holidays make it so easy to spend time with family. Travis and I will be going on a camping trip the day after Christmas and we booked a trip to New York for New Year's Eve. I literally can't wait to spend 7 days straight with him! We have made a fun filled list of everything we want to do while in New York. But still stay relaxed and enjoy what New York has to offer. We will experience the hustle and bustle of New York like a Texan. Freezing. Really, I just want to run through Central Park and go Ice Skating. I try not to wish away my days, BUT IT'S NEW YORK!
Wishing days away is easy when we don't get to spend the weeks together. One day soon, everything is going to fall into place. We just have to stay positive, enjoy the moments, and know that their is always a greater plan. We also have been interested in real estate. We are looking to buy a triplex or fourplex in the Houston area, all while having a long talk about my book store getting placed on hold. But like I've said, you do what you can do now. Even though a lot of our dreams are the same, we have to support each others dreams as they come. I buy in to Trav's ventures more often than not, and I'm actually very excited to manage a property and live in one of them. My heart does break knowing that the book store will have to come with time. Until then, the coffee on my couch tastes just fine.
Tuna w/ Greek Yogurt
Healthy Tuna with Greek Yogurt
Ingredients:
½ Cup Plain Greek Yogurt
2 Boiled Eggs w/ Yolk
2 Tbs Mustard
½ Onion Chopped
1 Stalk Celery Chopped
2 Tbs Dill Pickle Relish
12 oz White Albacore Tuna
Salt and Pepper to taste
Directions:
Drain Tuna. Combine Tuna and Boiled Eggs separating the Tuna. Chop the Onion and Celery. Combine all ingredients together and mix well. Easy!
